A refreshing and vibrant salad inspired by the flavors of the Mediterranean.
4 | fresh tomatoes, chopped |

1 | cucumber, peeled and chopped |
1 | green bell pepper, cut into ½" pieces |
1⁄2 | cup chopped red onion |
1 | tablespoon red wine vinegar |
1 | tablespoon balsamic vinegar |
1 | tablespoon extra virgin olive oil |
1 | teaspoon salt |
1 | tablespoon chopped fresh oregano |
1⁄4 | cup kalamata olives |
1⁄2 | cup feta cheese, crumbled (I use the fat free type) |
| 1. | In a mixing bowl, combine the red wine vinegar, balsamic vinegar, extra virgin olive oil, salt, and chopped fresh oregano. |

| 2. | Add the fresh tomatoes, peeled and chopped cucumber, green bell pepper cut into ½" pieces, and chopped red onion to the bowl. |
| 3. | Mix all ingredients thoroughly to ensure an even coating of the dressing. Allow the salad to marinate in the refrigerator for several hours to enhance and blend the flavors. |
| 4. | Serve the salad topped with kalamata olives and crumbled feta cheese. Enjoy! |
