A delightful dish featuring tender parsnips smashed and roasted to perfection, drizzled with honey and fresh thyme.
1 | tablespoon olive oil |

4 | parsnips, peeled and sliced |
4 | tablespoons honey |
4 | teaspoons fresh thyme |
1⁄2 | teaspoon pepper |
| 1. | Preheat the oven to 450°F. |

| 2. | In a large saucepan, bring salted water to a boil over high heat. Add the parsnips and simmer for 15 to 20 minutes until they are tender. Drain and set aside. |
| 3. | On a baking sheet, drizzle olive oil and place the parsnips sliced side down. Use a potato masher to gently smash each parsnip. Brush them with the excess oil. Season with salt, pepper, and thyme, then drizzle with honey. |
| 4. | Bake for 20 minutes or until the parsnips turn golden brown. |
